I have discovered a new dish that I got the idea for from a frozen veggie stir fry meal that I loved at the grocery store.  The store stopped carrying my favorite zippy sweet potato and vegetable medley so I realized I would just have to try to make it up myself.  The result was just as good, if not better than the frozen, packaged version.  Homemade is always better, right?  The best part is, it's really easy, healthy and delicious and it only takes about 20 minutes to make from start to finish.

Here's my recipe and as a main course, it serves two.

What you'll need:
l large sweet potato, cubed into bite size pieces
1/2 can of black beans
1/2 red bell pepper (chopped)
1/2 sweet onion (chopped)
TBLS diced cilantro
1/4 diced Jalapeno pepper
1 tsp coriander
2 TBLS honey
2 TBLS chili & garlic olive oil
1/4 tsp chili powder

Directions:
1.  Start out by sauteing the sweet potato in a pan with olive oil for about 7 minutes.
2.  Stir in the honey and spices, followed by all the ingredients.  Stir everything well to mix spices, honey and oil with all the veggies.
3.  Saute everything for another 7 to 8 minutes, until the sweet potato is soft enough to your liking.
4.  Serve it up and enjoy!

If you wanted, you could always add some corn and even chicken for variety.  I hope you enjoy this as much as I do.
