Today (Aug. 18) is National Fajita Day!  I am a huge fan of this Mexican cuisine which consists of any grilled meat that is served in a flour or corn tortilla. According to wikipedia, the term originally referred to skirt steak, the cut of beef first used in the dish but you can use anything really: chicken, other cuts of beef, pork, even seafood. If you want, you can leave the meat behind and go all vegetarian.  It's easy! Then you add in cooked vegetables like bell peppers, onions, beans, spanish rice or whatever you like. Of course you can't forget the toppings to complete the deliciousness: sour cream, guacamole, salsa, and cheese.

Fajitas are one of the easiest meals to whip up.  It's the "go-to" meal in our house when we either want something really easy to make or when we don't have ingredients for anything else.  We almost always have what it takes to make fajitas since they can be so versatile with what you put in them.
