Every couple of weeks Nicole, Simone, and Tonya who are seniors at SUNY Oneonta, studying to be Dieticians come in to the ZOZ studio to talk on the air about different diet related topics.  Today, it's all about fat substitutes: what's good and what's really not and what to look for on food labels.

Cranberry Orange Scones

(Using 75% cottage cheese as fat replacer and 25% butter)

4 cups plus ¼ cup all purpose flour
¼ cup sugar, plus additional for sprinkling
2 T baking powder
2 tsp. salt
1 Tbs grated orange zest
¼ c cold butter, diced
¾ c cottage cheese
4 eggs
1 cup cold heavy cream
1 cup dried cranberries
Egg wash: 1 egg beaten with 2 Tbs milk
½ cup confectioner’s sugar
2 Tbs orange juice

1.) Preheat oven to 350°F.

2.) In an electric mixer fitted with a paddle attachment, mix 4 c flour, ¼ c sugar, the baking powder, salt, and orange zest.

3.) Add the cold butter and mix on low until the butter resembles the size of peas.

4.) Combine the eggs and the cream. Add to the flour mixture. Mix until just blended.

5.) Combine the cranberries with ¼ c flour. Add to the dough.

6.) Dump dough out onto a floured surface. Knead into a ball, roll the dough ¾-in thick.

7.) Using a 3-in round cutter, cut circles of the dough.

8.) Place on a baking sheet, brush tops with egg wash, sprinkle with sugar.

9.) Bake for 20-25 minutes.

Yield: 16 scones
