I love breakfast, especially a hot breakfast!  One of my favorites is the good old breakfast sandwich with egg, cheese and sausage on an english muffin.  The only problem with that is that it's not exactly the healthiest choice.  I decided that needed to change because I love eating breakfast sandwiches!  

Here's what I did...

My sandwich included a whole grain english muffin (toasted) with a small amount of butter on each side, one poached egg topped with a little pepper, and a slice of chedder cheese. Then, instead of putting a sausage patty on it, I opted for a delicious, zesty black bean veggie burger.  Talk about yum and a whole lot better for you!  I like this healthier version just as much or even better than the sausage variety!  This is so easy and quick to make that I have one each weekend morning now.
