Looks can be deceiving.  Just ask my kids.  They took one look at my tray of freshly made kale chips yesterday and turned up their noses immediately.  However, after a bit of determined persuasion, they each tried a small bite and admitted that they were good.

After being frustrated by the incredible amount of unhealthy snacks for kids available in the grocery store, and very few healthy ones, I took matters into my own hands after hearing a friend talk about how their kids love kale chips.  By golly, I was going to make them a healthy snack that they would love!  So I bought a beautiful bunch of kale at the Oneonta Farmer's Market and you wouldn't believe it is how easy to make these.

Here's what you need:

a bunch of kale
olive oil (enough to coat all your kale)
seasoning of your choice: salt, pepper, garlic salt, etc.

1. Strip the leaves off of each piece of kale into easy to eat sized pieces.  When done with that, put it all in a bowl and toss with some olive oil--just enough to coat all the pieces.

2. Lay out all the kale pieces on a cookie sheet so that they aren't overlapping.
Season with salt and pepper or garlic salt, or whatever your favorite seasoning might be.  I like garlic salt with a little pepper.

3. Bake at 350 degrees for about 12-14 minutes.

4.Enjoy the light crispy treat you created.
